In the Semolina Pasta making class we will create pasta that is typical from the South of Italy, an eggless dough made simply with durum wheat and water.

In this hands on class we will cover how to mix and knead semola rimacinata into a smooth elastic dough. You will be guided on how to create the authentic southern Italian shapes of cavatelli and orecchiette.

We will create a sauce for our pasta, from seasonal ingredients local to Florian Cottage. You will be guided on how to cook your pasta, dress it, and most importantly enjoying our meal together.

You will each prepare your own dough, as I find the best way of learning is through doing. We will discuss what flour to use, where to source it and what optional equipment I find helpful in my home kitchen for pasta making.

We will also discuss how to dry and store this pasta, so you can have handmade pasta ready and waiting for you in your pantry for when you feel like creating your pasta dishes.

This class is vegetarian friendly and can also be vegan friendly. If you are vegan please make a note of this during the booking process.

Inclusions: Recipe folder to take home, morning tea, lunch matched with a glass of wine
